The purpose of this project is to work on establishing a local production chain for cereal ingredients for the food industry, in the form of functional flours. Startech aims to set up a an enhancement process throughout the chain, namely: batches of wheat for specific applications; special flours with particular technological properties and  recognized nutritional value; functional flours from thermal processes that confer specific technical and functional properties to be integrated into the texturizing market in competition with modified starches and gums. These features will make it possible to propose clean label formulations as there is growing demand for them on the markets.
