Consumers are currently calling for local products of differentiated quality, produced using sustainable and organic farming methods. Spelt meets these requirements to perfection. It is a cereal that has been traditionally grown in Wallonia.

The Wallep project aims to place on the market a new range of products based on Walloon spelt (flour, bulgur, pasta, yeasts, sourdough, syrup, alcohol) so as to create added value in the region and offer consumers products of differentiated quality while encouraging the establishment of a spelt sector in Wallonia. This will be made possible only by selecting the most suitable cultivars in advance and by optimizing the defined industrial processes.
