The purpose of the Vocalise project is to recover compounds from the manufacture of food products for the ready-to-use baker’s yeast market (in particular yeast powder) and the beer sector.  Yeasts and special malts are used mainly to add flavour to bread and special beers respectively. Volatile compounds – mainly flavours – go lost during production however. VOCALisE aims to recover the volatile compounds generated during the production of yeasts and special malts and use them to improve existing products as well as to develop new competitive and differentiated products.
