The Proflax project is built around flaxseed, an interesting raw material for the food sector given the emergence of the concept of “functional foods”. It is in fact at the origin of products highly sought after for their nutritional and/or technical and functional properties. Proflax aims to develop processes for the extraction, purification, formulation and packaging of the different components of flax seed, to determine the most relevant technological choices and to characterize the properties of the components obtained pursuant to the defined technological choices.
