The Laitherbe project aims to develop a dairy chain that is complete (producer, processor, consumer) and sustainable, while offering value-added outlets for dairy products. This sector is based on: the production of high quality milk and cheese  thanks to adapted animal feed formulated from local products; the preservation and improvement of the nutritional and gustatory qualities of milk, thanks to the use of innovative milk purification and cheese-making technologies in the Walloon Region; and the production of typical products directly from the region
